Loaded Baked Potato SoupBody 1/2lb bacon chopped into 1 inch pieces 1 large diced onion 1 cup diced celery 10 cups water 10 medium potatoes - diced 2 cups sour cream *hold back 3 tablespoons for garnish 4 tablespoons butter 1/4 cup chopped green onions *hold back 2 tablespoons for garnish 3 cups shredded cheddar cheese *hold back 1/4 cup for garnish Soul 2 teaspoons of salt 1 teaspoon of black pepper 1/4 cup corn starch 1 cup water 2 cups heavy cream Lovin'
In a large heavy pot, fry the shopped bacon, cooked and not crispy Add in onions and celery sautéing until onions are opaque. Add in water and potatoes. Simmer 10 minutes. If you prefer a creamier soup as opposed to a chunky one, simmer 20 minutes longer. Stir in sour cream. Add in butter, green onions, cheddar cheese, salt and pepper. Add corn starch to water and stir into pot. Let thicken and bring to almost to a boil then add heavy cream and bring to temperature. Served topped with a teaspoon sour cream, a sprinkle of cheddar cheese and a sprinkle of green onions.
